Kaddu ka kheer
Welcome to Jyoti's Kitchen. This a sweet indian dish made up of Kaddu (Loki), milk etc. It is a very delicious dish. This could be a best dish to eat after meal as every body likes "Khane k baad kuch meetha ho jaye".
Ingredients:
- Kaddu 2 Cups of peeled grated Kaddu
- Milk 3 Cups full cream milk
- Cream 1 Cup
- Ghee 2 Tablespoon
- Sugar 2 Tablespoon
- Elaichi Powder 1/4 Tea spoon
- Almond 3-4 small sliced
- Kismis 1 Tablespoon
Take Kaddu (White Pumpkin or Loki), get it peeled and grated as follows:
Please squeeze out all the water from grated kaddu as shown.
Take a pan. Add two tablespoon ghee and get it heated.
Then add grated kaddu in pan and fry it in low flame.
Let it become little brown.
Add milk and leave it for sometime to get boiled.
When the mixture starts boiling, add cream.
Add kismis depending on the amount of mixture.
After some time add sugar according to your taste for more or less sweet and leave it for 10-15 minutes until the mixture get thick.
Stir the mixture at a regular interval. When it seems that the mixture get thick enough then mix elaichi powder properly.

Now your "Kaddu ka kheer" is ready to serve. Take it in service bowl and garnish it with almonds.
You can have it cool or warm, as you like. You can keep it in freeze to get it chilled if like to eat chilled.
